Instructions
In a large salad bowl, combine the chopped tomatoes, diced cucumber, and sliced red onion.
Add the pitted Kalamata olives and crumbled feta cheese to the bowl, keeping some feta aside for garnish.
In a small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and black pepper until well mixed.
Drizzle the dressing over the salad ingredients, tossing gently to combine without breaking the feta.
Finally, sprinkle the chopped fresh parsley on top, along with the reserved feta cheese for garnish.
Allow the salad to sit for about 10 minutes to let the flavors meld before serving.
