2 slices of whole grain bread

1 ripe avocado, mashed

1 cup arugula or spinach

½ cup cucumber, thinly sliced

¼ cup fresh basil leaves

2 tablespoons green goddess dressing (store-bought or homemade)

¼ cup feta cheese, crumbled

Salt and black pepper to taste

Optional: 1 tablespoon pumpkin seeds for extra crunch

Instructions
 

Start by preparing your green goddess dressing if you're making it from scratch. Blend fresh basil, parsley, garlic, lemon juice, olive oil, Greek yogurt (or tahini), salt, and pepper until smooth and creamy.

    Take the two slices of whole grain bread and lightly toast them until golden brown for added texture.
