4 slices of sourdough bread

4 slices of aged cheddar cheese

4 slices of Gruyère cheese

2 tablespoons truffle oil

2 tablespoons unsalted butter, softened

1/4 cup caramelized onions

Fresh arugula leaves

Sea salt and freshly cracked black pepper to taste

Instructions
 

Heat a skillet over medium heat.

    Spread a thin layer of soft butter on one side of each slice of sourdough.

      On the unbuttered side of two slices, layer the aged cheddar and Gruyère cheeses evenly.

        Add the caramelized onions on top of the cheese, followed by a drizzle of truffle oil.

          Lay a handful of fresh arugula on top and sprinkle with sea salt and black pepper.

            Place the second slice of bread on top, buttered side up, to form a sandwich.

              Carefully place the sandwich in the skillet and grill for about 3-4 minutes until golden brown.

                Flip the sandwich and grill the other side for another 3-4 minutes until the cheese is melted and both sides are crispy.

                  Once cooked, remove from the skillet and let it cool slightly before cutting it in half.
