4 hot dog sausages

8 slices of your favorite cheese (cheddar, mozzarella, or a spicy pepper jack)

4 slices of bread (sourdough or brioche work well)

4 tablespoons butter

1 tablespoon Dijon mustard

1 tablespoon mayonnaise

1/4 cup chopped fresh chives (optional)

Salt and pepper to taste

Instructions
 

Preheat your grill or grill pan over medium heat.

    Cook the hot dog sausages on the grill for about 5-7 minutes, turning occasionally until they are heated through and grill marks appear. Remove from heat and set aside.

      In a bowl, mix the mayonnaise and Dijon mustard to create a creamy spread. Add salt and pepper to taste.

        Take the bread slices and spread a thin layer of the mayo-mustard mixture on one side of each slice.

          Layer two slices of cheese on the unspread side of each slice of bread.

            Create a pocket by placing the grilled hot dog in between two slices of cheese-coated bread, ensuring the cheese is facing the hot dog. Top with another slice of cheese and the second slice of bread (spread side out). Repeat for remaining hot dogs.

              Heat 1 tablespoon of butter in the grill pan over medium heat. Once melted, add one of the sandwich creations.

                Cook for about 3-4 minutes per side, pressing down gently with a spatula until the bread is golden brown and the cheese is melty.

                  Remove from heat and place on a cutting board. Repeat with the remaining sandwiches, adding more butter as needed.

                    Slice the sandwiches in half, sprinkle with chopped chives if desired, and serve immediately.
