4 slices sourdough bread

2 tablespoons unsalted butter, softened

1 cup sharp cheddar cheese, shredded

1 cup mozzarella cheese, shredded

1/4 cup goat cheese, crumbled

1 tablespoon fresh basil, chopped

1 tablespoon sun-dried tomatoes, finely chopped

Salt and pepper to taste

Balsamic glaze (for drizzling, optional)

Instructions
 

In a medium bowl, combine the shredded cheddar, mozzarella, crumbled goat cheese, chopped basil, and sun-dried tomatoes. Mix well and season with a pinch of salt and pepper.

    Take two slices of sourdough bread and spread a tablespoon of softened butter on one side of each slice.

      Heat a skillet over medium heat. Place the two slices of bread butter-side down in the skillet.

        Evenly distribute the cheese mixture on top of the bread in the skillet, then place the remaining two slices of bread on top, butter-side up.

          Grill for about 3-4 minutes, or until the bottom slices are golden brown. Carefully flip the sandwiches and grill the other side for another 3-4 minutes, ensuring the cheese is melted and the bread is crispy.

            Once done, remove from the skillet and let rest for a minute before slicing diagonally.

              If desired, drizzle with balsamic glaze before serving for an extra flavor boost.
