Grilled Cheese with Gouda, Roasted Mushrooms, and Onions

4 slices of sourdough bread

4 ounces Gouda cheese, sliced

1 cup mushrooms, sliced (cremini or button)

1 medium onion, thinly sliced

2 tablespoons olive oil

1 tablespoon balsamic vinegar

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Salt and pepper to taste

Butter for spreading

Instructions
 

Preheat your oven to 400°F (200°C).

    In a mixing bowl, toss the sliced mushrooms and onions with olive oil, balsamic vinegar, thyme, salt, and pepper. Spread them evenly on a baking sheet.

      Roast the vegetables in the oven for about 20 minutes, stirring halfway through, until they are caramelized and golden brown.

        Meanwhile, heat a skillet over medium heat and butter one side of each slice of sourdough bread.

          Put two slices of bread in the skillet, buttered side down. Layer each with Gouda slices, and then add the roasted mushrooms and onions on top.

            Add another layer of Gouda cheese, then top with the remaining slices of bread, buttered side up.

              Cook the grilled cheese sandwich for 4-5 minutes on each side, pressing down gently with a spatula, until the bread is toasted and the cheese is melted.

                Remove from the skillet, let cool for a minute, then slice in half.
