1 ½ lbs flank steak

2 tablespoons olive oil

2 garlic cloves, minced

1 teaspoon smoked paprika

1 teaspoon cumin

Salt and pepper to taste

2 cups cherry tomatoes, halved

1 red bell pepper, diced

1 jalapeño, finely chopped (seeds removed for less heat)

¼ cup red onion, finely chopped

2 tablespoons fresh cilantro, chopped

1 tablespoon lime juice

Instructions
 

In a small bowl, mix olive oil, minced garlic, smoked paprika, cumin, salt, and pepper.

    Rub the marinade all over the flank steak, ensuring it's well-coated. Cover and let it marinate in the refrigerator for at least 1 hour (or up to overnight for more flavor).

      While the steak is marinating, prepare the tomato pepper salsa. In a medium bowl, combine cherry tomatoes, red bell pepper, jalapeño, red onion, cilantro, lime juice, and a pinch of salt. Mix well and set aside to let the flavors meld.

        Preheat your grill to medium-high heat.

          Once hot, remove the steak from the marinade and place it on the grill. Grill for about 5-7 minutes on each side for medium-rare, or until it reaches your desired level of doneness.
