4 fresh Italian sausages (hot or mild, based on preference)

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 large onion, sliced

3 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon fresh basil, chopped (or 1/2 tsp dried)

Salt and pepper, to taste

4 crusty rolls or hoagie buns

Optional: Fresh arugula or spinach for topping

Prepare the Vegetables: In a bowl, combine sliced bell peppers, onion, and minced garlic. Drizzle with olive oil, sprinkle with oregano, basil, salt, and pepper. Toss well to coat.

    Preheat the Grill: Preheat the grill to medium-high heat. If using charcoal, let the coals heat until they are covered with gray ash.

      Grill the Sausages: Place the Italian sausages on the grill. Cook for about 10-12 minutes, turning regularly, until they are browned and cooked through (internal temperature should reach 160°F).

        Grill the Vegetables: On a grill-safe basket or foil, spread the seasoned vegetables and grill alongside the sausages for about 8-10 minutes, tossing occasionally until they're tender and slightly charred.

          Assemble the Rolls: Once the sausages and veggies are done, slice the sausages lengthwise. Stuff each roll with a sausage half and top with the grilled vegetables.
