Grilled Mushroom Cheese Sandwich

8 oz mixed mushrooms (cremini, shiitake, and portobello), sliced

1 tablespoon olive oil

1 clove garlic, minced

Salt and black pepper, to taste

4 slices of rustic bread (sourdough or whole grain)

4 oz cheese (Gruyère or sharp cheddar), sliced

2 tablespoons fresh basil, chopped

1 tablespoon balsamic vinegar

Butter, for spreading

Instructions
 

In a skillet over medium heat, add the olive oil. Once hot, add the sliced mushrooms and cook until they are tender and have released their moisture (about 5-7 minutes).

    Add the minced garlic to the mushrooms, and season with salt and pepper. Continue cooking for another 2-3 minutes until garlic is fragrant. Stir in balsamic vinegar and fresh basil, then remove from heat.

      On one side of each slice of bread, spread a thin layer of butter. This will create a crispy outer layer when grilled.

        Lay two slices of bread butter-side down on a clean surface. On each slice, layer half of the cheese, followed by half of the sautéed mushroom mixture, and top with the remaining cheese.

          Cover with the other slices of bread, butter-side up, forming two sandwiches.

            Heat a clean skillet or griddle over medium-low heat. Place the sandwiches in the skillet and grill for about 3-5 minutes on each side, or until the bread is golden brown and the cheese has melted.

              Once nicely toasted, remove sandwiches from the skillet and let rest for a minute before slicing.
