8 slices of rye bread

1 pound corned beef, thinly sliced

1 cup sauerkraut, drained and squeezed dry

1 cup Swiss cheese, shredded

1/2 cup Russian or Thousand Island dressing

4 tablespoons unsalted butter, softened

1 teaspoon caraway seeds (optional)

Instructions
 

Start by preheating your grill or skillet over medium heat.

    Spread 1 tablespoon of softened butter on one side of each slice of rye bread. This will help create a golden, crispy crust.

      On the unbuttered side of four slices, spread a generous layer of Russian or Thousand Island dressing.

        Layer the corned beef evenly on top of the dressing.

          Add the drained sauerkraut on top of the corned beef. If desired, sprinkle some caraway seeds for added flavor.

            Top with shredded Swiss cheese, and then place the remaining slices of bread on top, buttered side facing out.

              Carefully place the sandwiches on the preheated grill or skillet. Cook for about 4-5 minutes on each side, or until the bread is golden brown and the cheese has melted.

                Remove the sandwiches from the heat. Allow to cool for a minute, then slice in half. Serve warm with additional dressing on the side for dipping, if desired.
