8 ounces elbow macaroni

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

2 cups whole milk

1 cup Guinness stout (non-alcoholic version if preferred)

2 cups shredded Irish cheddar cheese

1 cup grated Gruyère cheese

1 teaspoon Dijon mustard

1/2 teaspoon onion powder

1/2 teaspoon garlic powder

Salt and pepper to taste

1/2 cup panko breadcrumbs

1 tablespoon olive oil

Fresh chives, chopped, for garnish

Cook the Pasta: In a large pot of salted boiling water, cook the elbow macaroni according to package directions until al dente. Drain and set aside.

    Make the Sauce: In the same pot, melt the butter over medium heat. Stir in the flour and cook for about 1-2 minutes until golden and bubbly.

      Add Milk and Guinness: Gradually whisk in the milk and Guinness, ensuring there are no lumps. Continue to cook, stirring constantly, until the mixture thickens (about 5-7 minutes).

        Cheese it Up: Stir in the shredded Irish cheddar and Gruyère cheese until they melt smoothly into the mixture. Add the Dijon mustard, onion powder, garlic powder, salt, and pepper to taste.

          Combine Pasta and Sauce: Fold the cooked macaroni into the cheese sauce until well coated.

            Prepare Topping: In a small bowl, mix the panko breadcrumbs with olive oil, then set aside.

              Transfer to Baking Dish: Pour the mac and cheese into a greased baking dish. Sprinkle the panko mixture evenly over the top.
