4 chicken thighs (bone-in, skin-on)

1 cup Guinness stout beer

1/4 cup soy sauce

1/4 cup honey

4 cloves garlic, minced

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

1 tablespoon Dijon mustard

1 tablespoon olive oil

Salt and pepper to taste

Chopped fresh parsley (for garnish)

Instructions
 

Marinate the Chicken: In a bowl, combine Guinness, soy sauce, honey, minced garlic, thyme, Dijon mustard, olive oil, salt, and pepper. Whisk well until combined. Place chicken thighs in a resealable plastic bag or a shallow dish, pour the marinade over, seal, and refrigerate for at least 1 hour (or up to 8 hours for more flavor).

    Preheat the Oven: Preheat your oven to 400°F (200°C).

      Sear the Chicken: In a large oven-safe skillet over medium-high heat, add a little olive oil. Remove chicken thighs from marinade, reserving the marinade for later. Pat the chicken dry, and season with a little salt and pepper. Once the skillet is hot, add the chicken thighs skin-side down. Sear for about 5-7 minutes until the skin is golden brown and crispy.

        Bake the Chicken: Flip the chicken thighs, pour the reserved marinade over them, and transfer the skillet to the preheated oven. Bake for 25-30 minutes or until the chicken is cooked through (internal temperature of 165°F or 74°C) and the sauce is caramelized and thickened.

          Glaze and Serve: If desired, broil the chicken for an additional 2-3 minutes to caramelize the top. Remove from the oven, let it rest for a few minutes, then garnish with chopped parsley before serving. Pair with mashed potatoes or a side of roasted vegetables for a complete meal.
