1 lb ground lamb (or beef/pork mix)

1 medium onion, finely grated

4 cloves garlic, minced

1 tsp dried oregano

1 tsp ground cumin

1/2 tsp ground cinnamon

1/2 tsp smoked paprika

1 tsp salt

1/2 tsp black pepper

1 egg, lightly beaten

1/4 cup breadcrumbs (optional for texture)

Olive oil (for cooking)

Instructions
 

In a large mixing bowl, combine ground lamb, grated onion, minced garlic, dried oregano, ground cumin, ground cinnamon, smoked paprika, salt, black pepper, and the lightly beaten egg.

    If you prefer a denser texture, fold in the breadcrumbs. Mix all the ingredients together until well combined—be careful not to overmix.

      Cover the bowl with plastic wrap and refrigerate for at least 1 hour to let the flavors meld.

        Preheat your grill or skillet over medium heat and lightly grease it with olive oil.

          Shape the meat mixture into logs or patties, about 1-2 inches thick, suitable for your grill or skillet.

            Cook the gyro meat for approximately 5-7 minutes per side, or until fully cooked and nicely browned on the outside. Internal temperature should reach 160°F (70°C).

              Once cooked, let it rest for a few minutes before slicing thinly against the grain.

                Serve with warm pita bread, diced tomatoes, red onion, and a generous drizzle of tzatziki sauce.
