4 whole wheat tortillas

4 large eggs

1 ripe avocado, diced

1 cup spinach, chopped

1/2 cup cherry tomatoes, halved

1/4 cup black beans, drained and rinsed

1/4 cup shredded low-fat cheese (optional)

1 teaspoon olive oil

1/2 teaspoon cumin

Salt and pepper to taste

Fresh cilantro, for garnish

Instructions
 

In a medium bowl, whisk the eggs, then season with cumin, salt, and pepper.

    Heat the olive oil in a non-stick skillet over medium heat. Add the chopped spinach and sauté until wilted, about 2 minutes.

      Pour the beaten eggs into the skillet with spinach and scramble until fully cooked, about 3-4 minutes.

        Remove from heat and stir in the black beans and halved cherry tomatoes.

          Lay out one tortilla on a flat surface and spoon a quarter of the egg mixture onto the center.

            Top with a quarter of the diced avocado and sprinkle with shredded cheese, if using.

              Fold the sides of the tortilla inwards, then roll from the bottom up to form a burrito. Repeat for the remaining tortillas.

                For a crispy finish, return the burritos to the skillet for 1-2 minutes on each side until golden brown.
