To make healthy chocolate mini muffins, you need simple, wholesome ingredients. The main star is whole wheat flour. It adds fiber and nutrients, making your muffins hearty. You’ll also need unsweetened cocoa powder for that rich chocolate taste. Baking powder and baking soda help the muffins rise. A bit of salt enhances the flavors. For sweetness, you can use honey or maple syrup. Unsweetened applesauce keeps the muffins moist and cuts down on fat. Two eggs provide structure and protein. Vanilla extract adds a lovely aroma. Ingredients

1 cup whole wheat flour

1/2 cup unsweetened cocoa powder

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/4 cup honey or maple syrup

1/2 cup unsweetened applesauce

2 large eggs

1 teaspoon vanilla extract

1/2 cup non-fat Greek yogurt

1/2 cup dark chocolate chips (preferably 60% cocoa or higher)

Instructions

Preheat the oven to 350°F (175°C) and line a mini muffin tin with paper liners or spray with cooking spray.

In a medium bowl, whisk together the whole wheat flour, cocoa powder, baking powder, baking soda, and salt until well combined.

In a large mixing bowl, mix the honey (or maple syrup), applesauce, eggs, and vanilla extract until smooth.

Add the Greek yogurt to the wet mixture and stir until fully incorporated.

Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Be careful not to overmix.

Fold in the dark chocolate chips, ensuring they are evenly distributed throughout the batter.

Using a small cookie scoop or tablespoon, fill each mini muffin cup about 2/3 full with batter.

Bake in the preheated oven for 10-12 minutes, or until a toothpick inserted into the center comes out clean.

Once baked, remove the muffins from the oven and let them cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
