Ingredients

12 Medjool dates, pitted

1 cup unsalted peanuts

¼ cup natural peanut butter

½ cup dark chocolate chips (dairy-free if desired)

1 teaspoon coconut oil

¼ cup almond flour

1 tablespoon maple syrup

Pinch of sea salt

Instructions

Prepare the Dates: Cut each date in half lengthwise and remove the pits if you haven't done this already. You should now have 24 halves.

Make the Caramel Layer: In a small bowl, mix the almond flour, peanut butter, and maple syrup until smooth and well combined. This will be the caramel layer.

Assemble the Snickers: On each date half, add a small dollop of the peanut butter caramel mixture and top with 3 to 4 peanuts, pressing gently into the caramel.

Prepare the Chocolate Coating: In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until the chocolate is completely melted and smooth.

Coat the Dates: Dip each assembled date half into the melted chocolate, ensuring that it is fully covered. Use a fork to lift it out and allow any excess chocolate to drip back into the bowl.

Set the Snickers: Place the chocolate-coated dates on a baking sheet lined with parchment paper. Repeat this process until all date halves are coated.

Refrigerate: Allow the chocolate-coated dates to cool and set in the refrigerator for about 30 minutes, or until the chocolate is firm.

Serve and Enjoy: Once set, they are ready to be enjoyed as a healthy alternative to traditional Snickers bars.
