4 medium-sized Yukon Gold potatoes

4 cloves of garlic, minced

2 tablespoons olive oil

2 teaspoons fresh rosemary, chopped

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 400°F (200°C).

    Wash and scrub the potatoes thoroughly. Slice them into thin rounds, about 1/8 inch thick, keeping the skin on for added nutrients and texture.

      In a large mixing bowl, combine the sliced potatoes, minced garlic, olive oil, chopped rosemary, smoked paprika, salt, and pepper. Toss the ingredients well to ensure the potato slices are evenly coated.

        On a baking sheet lined with parchment paper, stack the potato slices vertically in a circular pattern, forming a stack for each serving. Aim for three to four slices per stack to ensure even cooking and flavor distribution.

          Bake in the preheated oven for 25-30 minutes, or until potatoes are tender and golden brown on the edges. You can broil them for an additional 2-3 minutes at the end for extra crispiness.

            Once done, remove from the oven and let cool slightly.

              Transfer the stacks to a serving plate. Drizzle any leftover garlic-infused olive oil from the baking sheet over the top and sprinkle with fresh parsley for garnish.
