2 tablespoons olive oil

2 cloves garlic, minced

1 small red onion, finely chopped

1 medium zucchini, diced

1 red bell pepper, diced

1 cup cherry tomatoes, halved

1 cup spinach, fresh

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 cup feta cheese, crumbled

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Cook the Pasta: In a large pot, bring salted water to a boil. Add the whole wheat spaghetti and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add minced garlic and chopped red onion, and sauté for 2-3 minutes until translucent and fragrant.

      Add More Veggies: Stir in the diced zucchini and red bell pepper, and cook for another 5-7 minutes until they soften. Add the cherry tomatoes and spinach, stirring until the spinach wilts.
