8 large eggs

2 cups milk

6 slices of bread, cubed (preferably a hearty country loaf)

1 pound breakfast sausage, crumbled and cooked

1 cup sharp cheddar cheese, shredded

1/2 cup bell pepper, diced (red or green)

1/2 cup onion, diced

1 teaspoon garlic powder

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon cayenne pepper (optional for a kick)

Fresh parsley or chives, chopped (for garnish)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large mixing bowl, whisk together the eggs, milk, garlic powder, salt, black pepper, and cayenne pepper until well combined.

      In a buttered 9x13 inch casserole dish, evenly spread the cubed bread across the bottom.

        Layer the cooked breakfast sausage over the bread cubes, followed by the diced bell pepper and onion.

          Pour the egg mixture evenly over the casserole, ensuring that all the bread is soaked.

            Sprinkle the shredded cheddar cheese on top evenly.

              Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.

                After 30 minutes, remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden brown, and the center is set.

                  Remove from the oven and let cool for a few minutes before slicing into squares.

                    Garnish with fresh parsley or chives before serving.
