Ingredients
  

1 lb ground beef

1 cup uncooked long-grain rice

1 can (15 oz) diced tomatoes with green chilies

2 cups beef broth

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1 medium onion, diced

2 cloves garlic, minced

1 tsp chili powder

1 tsp cumin

Salt and pepper to taste

1 cup corn (frozen or canned)

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Preheat your oven to 350°F (175°C) and grease a 9x13 inch casserole dish.

    In a large skillet, cook the ground beef over medium heat until browned. Drain off any excess fat.

      Add the diced onion and minced garlic to the skillet, cooking until softened, about 3-4 minutes.

        Stir in the chili powder, cumin, salt, and pepper; cook for another minute to combine the flavors.

          In a separate bowl, combine the uncooked rice, diced tomatoes (with juice), beef broth, and corn. Mix well.

            Combine the beef mixture with the rice mixture in the skillet and stir to combine thoroughly.

              Pour the entire mixture into the greased casserole dish and spread evenly.

                Cover the casserole with aluminum foil and bake for 30 minutes.

                  Remove the foil, sprinkle the cheddar and mozzarella cheese evenly over the top, and return to the oven.

                    Bake uncovered for an additional 15 minutes, or until the cheese is bubbly and golden.

                      Let the casserole rest for about 5 minutes before serving. Garnish with chopped cilantro or parsley if desired.
