Ingredients
  

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

3 carrots, sliced

2 celery stalks, diced

1 pound smoked ham, cubed

2 cups dried beans (cannellini or navy beans), soaked overnight and drained

6 cups chicken or vegetable broth

1 bay leaf

1 teaspoon dried thyme

Salt and pepper to taste

1 cup fresh kale or spinach, chopped

2 tablespoons fresh parsley, chopped (for garnish)

Optional: crusty bread for serving

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.

    Stir in the garlic, carrots, and celery. Cook for an additional 5 minutes, until the vegetables are softened.

      Add the cubed ham to the pot, stirring to combine and allowing it to brown slightly for about 3 minutes.

        Pour in the soaked and drained beans, then add the chicken or vegetable broth, bay leaf, dried thyme, salt, and pepper. Bring the mixture to a boil.

          Once boiling, reduce the heat to low and let the soup simmer uncovered for about 1.5 to 2 hours, or until the beans are tender.

            Remove the bay leaf, then stir in the chopped kale or spinach, cooking for an additional 5 minutes until wilted.

              Taste and adjust seasoning if needed. Serve hot, garnished with fresh parsley and accompanied by crusty bread if desired.
