1 leftover ham bone (with some meat still attached)

4 cups low-sodium chicken broth

2 medium potatoes, diced

4 cups green cabbage, chopped

1 onion, finely chopped

2 carrots, sliced

2 celery stalks, chopped

3 cloves garlic, minced

1 teaspoon dried thyme

1 bay leaf

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley for garnish (optional)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrots, and celery, sautéing until the onions are translucent, about 5 minutes.

    Stir in the minced garlic and cook for another minute until fragrant.

      Add the diced potatoes, chopped cabbage, and the ham bone to the pot.

        Pour in the chicken broth and add the dried thyme and bay leaf. Stir well to combine all ingredients.

          Bring the soup to a boil, then reduce the heat to low and simmer uncovered for about 45 minutes, or until the vegetables are tender and the ham is heated through.

            Remove the ham bone from the pot, and once it is cool enough to handle, shred any remaining meat off the bone and return it to the soup. Discard the bone and bay leaf.

              Season the soup with salt and pepper to taste. If the flavor is too strong, add a bit more broth or water to balance it out.

                Allow the soup to simmer for an additional 10 minutes for all flavors to meld.
