Ingredients

3 ripe bananas, mashed

1 cup granulated sugar

1/2 cup brown sugar, packed

1/2 cup unsalted butter, softened

2 large eggs

1 teaspoon vanilla extract

1 ½ cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup walnuts, chopped

1/2 cup sour cream

1/4 cup milk

1/2 cup heavy whipping cream (for frosting)

2 tablespoons powdered sugar (for frosting)

1 teaspoon vanilla extract (for frosting)

Optional: additional walnuts for garnish

Instructions

Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

Add in the mashed bananas, eggs, and 1 teaspoon of vanilla extract. Mix until well combined.

In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.

Gradually add the dry ingredients to the wet mixture, alternating with the sour cream and milk. Stir until just combined; avoid overmixing.

Fold in the chopped walnuts gently into the batter.

Pour the batter into the prepared cake pan and smooth the top.

Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted in the center comes out clean.

Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

While the cake is cooling, prepare the frosting by whipping the heavy cream in a mixing bowl until soft peaks form.

Add the powdered sugar and vanilla extract, and continue to whip until stiff peaks form.

Once the cake is completely cool, spread a layer of whipped cream frosting on top.

Garnish with additional chopped walnuts for decoration.

Slice and serve your Heavenly Banana Walnut Cream Cake. Enjoy the divine flavors!
