2 to 3 pounds beef tenderloin roast, trimmed

4 tablespoons unsalted butter, softened

4 cloves garlic, minced

2 tablespoons fresh rosemary, finely chopped

2 tablespoons fresh thyme, finely chopped

1 tablespoon fresh parsley, finely chopped

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons olive oil

1 teaspoon Dijon mustard (optional)

Fresh herbs for garnish (rosemary or thyme sprigs)

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Herb Butter: In a small bowl, combine the softened butter, minced garlic, rosemary, thyme, parsley, salt, and black pepper. Mix well until all the herbs are evenly distributed throughout the butter.

      Sear the Beef: In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the beef tenderloin roast and sear on all sides for about 2-3 minutes per side, until a golden brown crust forms. This enhances the flavor and creates a beautiful exterior.

        Coat with Butter: Remove the skillet from heat. If using Dijon mustard, spread it over the top of the roast for an added flavor dimension. Then, scoop the herb butter mixture onto the top of the roast, spreading it evenly to cover the surface.

          Roast in the Oven: Transfer the skillet to the preheated oven and roast for about 25-30 minutes, or until the internal temperature reaches 135°F (57°C) for medium-rare. Adjust the roasting time according to your preferred doneness—145°F (63°C) for medium.

            Rest the Meat: Once done, remove the roast from the oven and loosely cover it with aluminum foil. Let it rest for 10-15 minutes; this helps redistribute the juices for a tender cut.

              Slice and Serve: Once rested, slice the beef tenderloin into thick medallions. Serve warm, garnished with fresh herb sprigs.
