4 bone-in pork chops (about 1-inch thick)

2 tablespoons olive oil

1 tablespoon fresh rosemary, finely chopped

1 tablespoon fresh thyme, finely chopped

2 cloves garlic, minced

Salt and black pepper to taste

4 tablespoons unsalted butter

1 teaspoon lemon juice

Fresh parsley, chopped (for garnish)

Prepare the Pork Chops: Take the pork chops out of the refrigerator and let them come to room temperature (about 20-30 minutes). Pat them dry with paper towels. This helps achieve a nice sear.

    Seasoning: In a small bowl, mix the chopped rosemary, thyme, minced garlic, salt, and black pepper. Rub this herb mixture generously on both sides of the pork chops.

      Heat the Oil: In a large skillet, heat the olive oil over medium-high heat until shimmering.

        Sear the Pork Chops: Add the seasoned pork chops to the skillet. Sear for about 4-5 minutes without moving them until they're golden brown. Flip the chops and sear the other side for another 4-5 minutes. Use a meat thermometer; the internal temperature should reach 145°F (63°C).

          Make the Garlic Butter: Once the pork chops are cooked, lower the heat to medium. Push the chops to one side of the skillet. To the other side, add the butter and let it melt. Stir in the lemon juice for added brightness and let it bubble for about a minute.

            Baste the Chops: Using a spoon, collect the melted garlic butter and pour it over the pork chops, basting them well. Cook for an additional minute to soak in the flavors.

              Rest the Chops: Remove the pork chops from the skillet and place them on a plate. Cover with foil and let them rest for 5 minutes before serving. This allows the juices to redistribute.
