Ingredients
  

1 lb ground turkey or lean beef

1 medium onion, diced

3 cloves garlic, minced

2 cups low-sodium chicken or vegetable broth

1 can (28 oz) crushed tomatoes

2 cups water

2 teaspoons dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional)

8 oz whole wheat lasagna noodles, broken into pieces

1 cup ricotta cheese

1 cup shredded mozzarella cheese (plus extra for topping)

1/4 cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil for garnish (optional)

Instructions
 

In a large pot or Dutch oven, heat a drizzle of olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.

    Add the ground turkey (or beef) to the pot and break it up with a wooden spoon. Cook until browned and cooked through, about 7-8 minutes. Season with salt, pepper, and red pepper flakes if using.

      Pour in the chicken or vegetable broth and crushed tomatoes. Stir in the water, oregano, basil, and additional salt and pepper. Bring the mixture to a boil.

        Once boiling, add the broken lasagna noodles. Reduce heat to a simmer and let it cook for about 10-12 minutes, or until the noodles are tender.

          In a small bowl, combine the ricotta cheese, half of the mozzarella, and the grated Parmesan. Mix well and set aside.

            Once the noodles are cooked, remove the soup from the heat. Stir in the ricotta mixture until well incorporated.

              Serve the soup in bowls, topped with remaining mozzarella and a sprinkle of fresh basil if desired.
