2 medium-sized beets, roasted and peeled

100g cream cheese (or Greek yogurt for a lighter option)

1 tablespoon tahini

1 tablespoon lemon juice

1 teaspoon honey (or maple syrup for a vegan option)

Salt and pepper to taste

4 slices of whole grain or rye bread

Fresh herbs (such as dill or parsley), for garnish

Crushed walnuts or sunflower seeds, for topping

Instructions
 

Start by preheating your oven to 400°F (200°C) for roasting the beets if you haven't done so already. Wrap the cleaned beets in foil and roast them for about 45-60 minutes, or until tender (you can also steam them if preferred).

    Once the beets are roasted and cooled, place them in a food processor. Add the cream cheese (or Greek yogurt), tahini, lemon juice, honey, salt, and pepper.

      Blend the mixture until it is smooth and creamy. Stop to scrape down the sides of the bowl as needed to ensure everything is well combined.

        Taste the mixture and adjust the seasoning if necessary, adding more lemon juice for tang or more honey for sweetness.

          While you prepare the toast, heat a non-stick skillet or toaster, lightly toasting the slices of bread until golden brown and crispy.

            Spread a generous layer of the whipped beetroot mixture onto each piece of toast.
