Ingredients

1 pound ground beef

1 medium onion, diced

2 cloves garlic, minced

4 medium potatoes, thinly sliced

2 cups frozen mixed vegetables (peas, carrots, corn)

1 can (10.5 oz) cream of mushroom soup

1 cup beef broth

1 teaspoon Worcestershire sauce

1 teaspoon Italian seasoning

Salt and pepper to taste

1 cup shredded cheddar cheese

1 tablespoon olive oil for sautéing

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Cook the Beef: In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until translucent. Add the ground beef and cook until browned. Drain excess fat.

Combine Ingredients: In a large mixing bowl, combine the cooked beef mixture, sliced potatoes, frozen mixed vegetables, cream of mushroom soup, beef broth, Worcestershire sauce, Italian seasoning, salt, and pepper. Stir well to combine all the ingredients.

Layer in Casserole Dish: Lightly grease a 9x13-inch casserole dish. Spoon the mixture into the dish and spread it evenly.

Cover and Bake: Cover the dish with aluminum foil and bake in the preheated oven for 45 minutes. This will help steam the potatoes and make them tender.

Add Cheese: After 45 minutes, remove the foil and sprinkle shredded cheddar cheese on top. Return the casserole to the oven uncovered and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden, and the potatoes are fork-tender.

Cool and Serve: Once done, let the casserole cool for about 5 minutes before serving. Enjoy!
