1 cup whole milk, warmed (110°F or 45°C)

2 1/4 teaspoons (1 packet) active dry yeast

1/2 cup granulated sugar, divided

1/4 cup unsalted butter, melted

2 large eggs

4 cups all-purpose flour, plus extra for dusting

1 teaspoon vanilla extract

1/2 teaspoon salt

Vegetable oil, for frying

2 cups powdered sugar (for glaze)

1/4 cup milk (for glaze)

1 teaspoon vanilla extract (for glaze)

Instructions
 

In a small bowl, combine the warmed milk and 1 tablespoon of sugar. Sprinkle the yeast over the top, stir gently, and let it sit for about 5-10 minutes until frothy.

    In a large mixing bowl, combine the melted butter, remaining sugar, eggs, vanilla extract, and the frothy yeast mixture. Stir until well combined.

      Gradually add the flour and salt to the wet mixture, stirring until a sticky dough begins to form.

        Turn the dough out onto a floured surface and knead for about 5-7 minutes until smooth and elastic. Place the dough in a greased bowl, cover with plastic wrap, and let it rise in a warm place for about 1-2 hours or until doubled in size.

          Once risen, punch the dough down and roll it out on a floured surface to about 1/2 inch thickness. Use a doughnut cutter or two round cutters of different sizes to cut out doughnuts and holes. Place them on a floured baking sheet.

            Cover the cut doughnuts with a clean kitchen towel and let them rise again for about 30-45 minutes until puffy.

              In a deep pot or fryer, heat vegetable oil to 350°F (175°C). Carefully add a few doughnuts at a time, frying for about 2 minutes per side or until golden brown. Remove with a slotted spoon and drain on paper towels.

                In a mixing bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth to make the glaze. Dip the warm doughnuts into the glaze and let excess drip off.
