Ingredients

4 boneless, skinless chicken breasts

1 cup all-purpose flour

2 large eggs

1 cup panko breadcrumbs

1 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon Italian seasoning

Salt and pepper to taste

½ cup mayonnaise

½ teaspoon Dijon mustard

2 tablespoons fresh parsley, chopped (for garnish)

1 lemon, sliced (for garnish)

Instructions

Preheat your oven to 400°F (200°C). Prepare a baking sheet by lining it with parchment paper or lightly greasing it.

In a shallow bowl, season the flour with salt and pepper.

In another bowl, beat the eggs until smooth.

In a third bowl, combine panko breadcrumbs, grated Parmesan cheese, garlic powder, Italian seasoning, and additional salt and pepper. Mix well.

Take each chicken breast and coat it first in the seasoned flour, shaking off any excess.

Next, dip the flour-coated chicken into the beaten eggs, ensuring it's fully covered.

Lastly, roll the chicken in the panko-Parmesan mixture, pressing down slightly to ensure the coating sticks well.

In a separate small bowl, mix together the mayonnaise and Dijon mustard; spread this mixture evenly over the top of each coated chicken breast.

Place the chicken breasts on the prepared baking sheet and bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the crust is golden and crispy.

Once cooked, remove from the oven and let rest for a few minutes. Garnish with fresh parsley and lemon slices before serving.
