2 boneless, skinless chicken breasts

1 cup grated Parmesan cheese

1 cup panko breadcrumbs

2 cloves garlic, minced

1 teaspoon dried Italian herbs (oregano, basil, thyme)

1 teaspoon paprika

1/2 teaspoon black pepper

2 large eggs

2 tablespoons heavy cream

2 tablespoons olive oil

Salt to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.

    In a shallow bowl, whisk together the eggs and heavy cream until fully combined.

      In another bowl, mix together the grated Parmesan cheese, panko breadcrumbs, minced garlic, dried herbs, paprika, black pepper, and a generous pinch of salt.

        Make sure the chicken breasts are evenly sized. You can pound them slightly to ensure even cooking.

          Dip each chicken breast first into the egg mixture, allowing the excess to drip off.

            Next, coat the chicken in the Parmesan and breadcrumb mixture, pressing down lightly to adhere the coating well.

              In a large skillet, heat the olive oil over medium heat. Once hot, carefully add the coated chicken breasts to the skillet. Sear each side for about 3-4 minutes, or until golden brown.

                Transfer the seared chicken to the prepared baking sheet and complete baking in the preheated oven for 15-20 minutes, or until the internal temperature reaches 165°F (74°C).

                  Once cooked, remove from the oven and let rest for a couple of minutes before slicing.

                    Garnish with fresh chopped parsley before serving.
