Ingredients

1 lb ground beef

1/2 lb ground pork

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

1/4 cup chopped fresh parsley (plus more for garnish)

1 large egg

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

1 jar (24 oz) marinara sauce

4 hoagie rolls or sub buns

2 cups shredded mozzarella cheese

Olive oil, for drizzling

Instructions

Prepare the Meatball Mixture: In a large mixing bowl, combine the ground beef, ground pork, breadcrumbs, Parmesan, parsley, egg, minced garlic, oregano, salt, and pepper. Mix well until all ingredients are fully incorporated.

Form the Meatballs: Preheat your oven to 400°F (200°C). Using your hands, shape the meat mixture into meatballs, about 1.5 inches in diameter. Place them on a baking sheet lined with parchment paper.

Bake the Meatballs: Drizzle a little olive oil over the meatballs and bake in the preheated oven for 20 minutes, or until they're browned and cooked through.

Heat the Marinara Sauce: While the meatballs are baking, heat the marinara sauce in a saucepan over medium heat. Add the baked meatballs to the sauce and simmer for about 5 minutes to allow the flavors to meld.

Assemble the Subs: Slice the hoagie rolls lengthwise without cutting all the way through. Place a few meatballs in each roll, generously spooning marinara sauce over the top.

Add Cheese: Top each loaded roll with a generous amount of shredded mozzarella cheese.

Melt the Cheese: Place the assembled subs back on the baking sheet and return them to the oven for an additional 5-7 minutes until the cheese is bubbly and golden.

Serve: Remove the subs from the oven, garnish with extra parsley, and serve hot!
