1 lb ground beef

1/2 cup breadcrumbs

1/4 cup chopped onion

1 egg

1/4 cup ketchup

1 tbsp Worcestershire sauce

1 tsp garlic powder

1 tsp salt

1/2 tsp black pepper

1/2 cup shredded cheddar cheese (optional)

For the Creamy Mashed Potatoes:

4 medium-sized Yukon Gold potatoes, peeled and cubed

1/4 cup milk

2 tbsp butter

Salt and pepper to taste

Fresh chives, chopped (for garnish, optional)

For the Mixed Vegetables:

1 cup frozen peas and carrots (or any mix you prefer)

1 tbsp olive oil

1 tsp salt

1/2 tsp black pepper

1 tsp dried thyme

Instructions
 

Prepare the Meatloaf:

    - Preheat your oven to 350°F (175°C).

      - In a mixing bowl, combine ground beef, breadcrumbs, chopped onion, egg, ketchup, Worcestershire sauce, garlic powder, salt, and pepper. Mix until just combined.

        - Shape the mixture into a loaf and place in a baking dish. If using, sprinkle cheddar cheese on top.

          - Bake for 45 minutes or until the interior temperature reaches 160°F (70°C). Let it rest for 5-10 minutes before slicing.

            Make the Creamy Mashed Potatoes:

              - While the meatloaf is baking, put the cubed potatoes in a large pot of salted water. Boil until tender, about 15-20 minutes.

                - Drain the potatoes and return them to the pot. Add milk, butter, salt, and pepper. Mash until smooth and creamy. Adjust the seasoning to your taste.

                  - Optionally, garnish with chopped chives.

                    Prepare the Mixed Vegetables:

                      - In a frying pan, heat the olive oil over medium heat. Add the frozen peas and carrots. Sprinkle with salt, pepper, and thyme.

                        - Sauté for about 5-7 minutes until the vegetables are heated through and slightly tender.
