1.5 lbs pork tenderloin

1/4 cup balsamic vinegar

1/4 cup honey

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon mustard (Dijon or whole grain)

Salt and pepper to taste

1 tablespoon fresh parsley, chopped (for garnish)

Prepare the Marinade: In a mixing bowl, whisk together balsamic vinegar, honey, olive oil, minced garlic, thyme, rosemary, mustard, salt, and pepper until well combined.

    Marinate the Pork: Place the pork tenderloin in a large resealable plastic bag or a shallow dish. Pour the marinade over the pork, ensuring it is well coated. Seal the bag or cover the dish, and refrigerate for at least 1 hour (or up to overnight for maximum flavor).

      Preheat the Oven: Preheat your oven to 400°F (200°C).

        Sear the Pork: In a large oven-safe skillet, heat a tablespoon of olive oil over medium-high heat. Remove the pork from the marinade (reserve the marinade for later) and sear it in the skillet for about 3-4 minutes on each side, until it’s nicely browned.

          Bake in the Oven: Once seared, pour the reserved marinade over the pork in the skillet. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the internal temperature reaches 145°F (63°C).

            Rest and Slice: Remove the pork from the oven and let it rest for 5-10 minutes before slicing. This allows the juices to redistribute, keeping the meat juicy.

              Serve: Slice the pork tenderloin into medallions and drizzle with the pan sauce. Garnish with fresh parsley.
