Honey Chipotle Chicken Rice Bowls

1 lb boneless, skinless chicken thighs

2 tablespoons honey

2 tablespoons chipotle in adobo sauce (more or less to taste)

1 tablespoon olive oil

1 tablespoon soy sauce

1 teaspoon garlic powder

1 teaspoon ground cumin

2 cups cooked brown rice

1 cup black beans, rinsed and drained

1 cup corn (frozen or fresh)

1 avocado, diced

1 cup cherry tomatoes, halved

1/4 cup fresh cilantro, chopped

Lime wedges for serving

Salt and pepper, to taste

Instructions
 

Marinate the Chicken: In a bowl, mix together honey, chipotle in adobo sauce, olive oil, soy sauce, garlic powder, cumin, salt, and pepper. Add the chicken thighs, making sure they're coated well. Cover and marinate in the refrigerator for at least 30 minutes (up to 2 hours for more flavor).

    Cook the Chicken: Preheat the grill or a grill pan over medium-high heat. Remove the chicken from the marinade and grill for about 6-7 minutes on each side or until fully cooked through (internal temperature should reach 165°F). Let it rest for 5 minutes before slicing.

      Prepare the Rice Bowl: While the chicken is resting, prepare the rice bowls. In serving bowls, layer the cooked brown rice, black beans, corn, diced avocado, and cherry tomatoes.

        Slice and Serve: Slice the grilled chicken and arrange it on top of the rice mixture. Garnish with fresh cilantro and a squeeze of lime juice.
