4 boneless, skinless chicken thighs

1/4 cup honey

3 cloves garlic, minced

2 tablespoons soy sauce

1 tablespoon Dijon mustard

1 tablespoon apple cider vinegar

1 tablespoon olive oil

Salt and pepper, to taste

1 teaspoon sesame oil (optional)

1/4 teaspoon red pepper flakes (optional)

Chopped green onions, for garnish

Sesame seeds, for garnish

Prepare the Marinade: In a medium bowl, whisk together the honey, minced garlic, soy sauce, Dijon mustard, apple cider vinegar, olive oil, salt, and pepper. If you’re using sesame oil and red pepper flakes, add them now for an extra kick.

    Marinate the Chicken: Place the chicken thighs in a large zip-top bag or a shallow dish. Pour half of the marinade over the chicken, ensuring it’s well coated. Seal the bag or cover the dish, and refrigerate for at least 30 minutes (or up to 4 hours for best results).

      Cook the Chicken: Preheat your grill or skillet over medium-high heat. Remove the chicken from the marinade, letting any excess drip off. Cook for about 5-7 minutes on each side, or until the chicken is cooked through and has a nice golden-brown color.

        Reduce the Marinade: While the chicken is cooking, pour the remaining marinade into a small saucepan. Bring it to a boil and then reduce to a simmer, letting it reduce for about 5-8 minutes until it thickens slightly.

          Glaze the Chicken: Brush the thickened marinade over the chicken during the last minute of cooking to create a delicious glaze.
