1.5 pounds chicken thighs, boneless and skinless

1/2 cup honey

1/4 cup soy sauce (low sodium preferred)

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon rice vinegar

1 tablespoon cornstarch

2 tablespoons water

2 tablespoons sesame oil

1 teaspoon black pepper

1/2 teaspoon red pepper flakes (optional, for heat)

2 green onions, sliced (for garnish)

1 tablespoon sesame seeds (for garnish)

Instructions
 

Marinate the Chicken: In a bowl, whisk together honey, soy sauce, minced garlic, grated ginger, rice vinegar, black pepper, and red pepper flakes. Add the chicken thighs and ensure they are well coated. Allow to marinate for at least 30 minutes (or up to overnight in the refrigerator for deeper flavor).

    Prepare the Sauce: In a small bowl, mix cornstarch and water until smooth. Add this mixture to the marinade and stir well. This will help thicken the sauce later.

      Cook the Chicken: In a large skillet, heat sesame oil over medium heat. Remove chicken from marinade (reserve the marinade) and add it to the skillet. Cook for about 6-8 minutes on each side until golden brown and cooked through. Use a meat thermometer to ensure the internal temperature reaches 165°F (75°C).

        Make the Sauce: Once the chicken is cooked, add the reserved marinade to the skillet. Bring it to a simmer and allow it to bubble for about 3-5 minutes until it thickens to your desired consistency.
