4 chicken thighs (bone-in, skin-on)

1/4 cup honey

1/4 cup fresh lemon juice

4 garlic cloves, minced

1 tablespoon olive oil

1 teaspoon lemon zest

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

Salt and pepper to taste

Lemon slices and fresh thyme sprigs for garnish

Instructions
 

Preheat your oven to 400°F (200°C).

    In a medium bowl, whisk together the honey, lemon juice, minced garlic, olive oil, lemon zest, thyme, salt, and pepper until well combined.

      Place the chicken thighs in a large baking dish and pour the honey lemon garlic mixture over them, ensuring they are well coated.

        Let the chicken marinate for at least 30 minutes (or up to 2 hours in the refrigerator) to absorb the flavors.

          Once marinated, arrange the chicken skin-side up in the baking dish.

            Bake in the preheated oven for 35-40 minutes or until the chicken is cooked through and the skin is crispy. You can baste the chicken halfway through with the sauce for extra flavor.

              To check for doneness, make sure the internal temperature of the chicken reaches 165°F (75°C).
