Ingredients

4 salmon fillets (6 oz each)

1 cup fresh pineapple, diced

1/4 cup honey

2 tablespoons soy sauce

2 tablespoons lime juice

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 tablespoon olive oil

Salt and pepper to taste

Fresh cilantro or green onions for garnish (optional)

Instructions

In a medium bowl, combine the diced pineapple, honey, soy sauce, lime juice, minced garlic, and grated ginger. Stir well to create a marinade.

Place the salmon fillets in a shallow dish and pour half of the pineapple marinade over them, ensuring the salmon is well coated. Let it marinate for at least 30 minutes in the refrigerator. Reserve the rest of the marinade for basting.

Preheat your grill or a grill pan over medium-high heat. Brush the grill or pan with olive oil to prevent sticking.

Remove the salmon from the marinade and season with salt and pepper on both sides.

Place the salmon fillets skin-side down on the grill. Cook for about 5 minutes without moving them, allowing the skin to become crispy.

Carefully flip the salmon and brush with the reserved marinade. Cook for an additional 4-5 minutes or until the salmon is cooked through and flakes easily with a fork.

Once cooked, remove the salmon from the grill and let it rest for a few minutes.

Serve the salmon topped with the remaining diced pineapple mixture. Garnish with fresh cilantro or green onions if desired.
