Ingredients
  

1 cup unsalted butter, softened

1 cup granulated sugar

1 cup brown sugar, packed

2 large eggs

2 teaspoons vanilla extract

3 cups all-purpose flour

½ cup cocoa powder

1 teaspoon baking soda

1 teaspoon salt

1 cup chocolate chips

1 cup whipped cream cheese frosting (store-bought or homemade)

½ cup chocolate ganache (store-bought or homemade)

Sprinkles, for garnish

Instructions
 

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

    In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

      Add the eggs one at a time, followed by the vanilla extract, and mix until well incorporated.

        In a separate bowl, whisk together the all-purpose flour, cocoa powder, baking soda, and salt.

          Gradually add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to overmix.

            Fold in the chocolate chips until evenly distributed in the cookie dough.

              Use a cookie scoop or tablespoon to drop rounded portions of dough onto the prepared baking sheets, leaving space between each cookie.

                Bake for 10-12 minutes or until the edges are set, but the centers remain soft. Remove from the oven and allow them to cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.

                  Once the cookies are cool, use a piping bag or a knife to generously spread whipped cream cheese frosting on the flat side of half of the cookies.

                    Place another cookie on top of the frosted cookies to create a sandwich.

                      Drizzle or dip the tops of the cookie sandwiches in chocolate ganache, allowing excess to drip off.

                        Finish with a sprinkle of colorful sprinkles on top of the ganache.
