1 lb boneless, skinless chicken tenders

1 cup buttermilk

1 cup all-purpose flour

1/2 cup cornstarch

1 tsp paprika

1 tsp garlic powder

1/2 tsp cayenne pepper (adjust for heat preference)

1/2 tsp salt

1/2 tsp black pepper

Vegetable oil for frying

1/2 cup honey

2 tbsp hot sauce (like Frank's or Sriracha)

1 tbsp apple cider vinegar

1 tsp lemon juice

Instructions
 

Marinate the Chicken: In a large bowl, combine the buttermilk and chicken tenders. Cover and refrigerate for at least 1 hour or up to overnight for maximum flavor.

    Prepare the Breading: In a separate bowl, mix together the flour, cornstarch, paprika, garlic powder, cayenne pepper, salt, and black pepper. This will be your breading mix.

      Heat the Oil: In a large skillet or deep fryer, pour in enough vegetable oil to submerge the chicken tenders (about 1-2 inches deep). Heat the oil to 350°F (175°C).

        Coat the Chicken: Remove the chicken tenders from the buttermilk and allow excess liquid to drip off. Dredge each tender in the flour mixture, pressing lightly to ensure a good coating. Shake off any excess flour.

          Fry the Chicken: Once the oil is hot, carefully place the coated tenders in the oil in batches, avoiding overcrowding. Fry for about 4-5 minutes per side until golden brown and the internal temperature reaches 165°F (75°C). Use a slotted spoon to remove the tenders and place them on a paper towel-lined plate to drain excess oil.

            Make the Hot Honey Sauce: In a small saucepan over low heat, combine the honey, hot sauce, apple cider vinegar, and lemon juice. Stir until the mixture is well combined and heated through, about 2-3 minutes.

              Glaze the Tenders: Drizzle the hot honey sauce over the chicken tenders, or toss them in the sauce in a large bowl to coat evenly.
