4 salmon fillets (6 oz each)

Salt and black pepper, to taste

2 tablespoons olive oil

4 cloves garlic, minced

1 cup cherry tomatoes, halved

2 cups fresh spinach

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Fresh basil leaves, for garnish

Lemon slices, for serving

Instructions
 

Season the Salmon: Pat the salmon fillets dry with paper towels. Season both sides with salt and black pepper.

    Sear the Salmon: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the salmon fillets skin-side down. Cook for about 4-5 minutes per side, or until the salmon is golden brown and reaches your desired doneness. Remove from the skillet and set aside.

      Prepare the Sauce: In the same skillet, lower the heat to medium and add the minced garlic. Sauté for about 1 minute until fragrant (be careful not to burn).

        Add Tomatoes and Spinach: Add the halved cherry tomatoes and fresh spinach to the skillet. Cook for about 3-4 minutes, or until the spinach is wilted and the tomatoes are slightly softened.

          Create the Creamy Sauce: Pour in the heavy cream and stir to combine, scraping the bottom of the skillet to incorporate all the flavors. Bring to a gentle simmer, then stir in the grated Parmesan cheese and Italian seasoning. Let it simmer for an additional 2-3 minutes until the sauce thickens slightly.

            Combine: Return the seared salmon fillets to the skillet, spooning some of the creamy sauce over the top. Allow them to warm through for 2 minutes.

              Serve and Garnish: Plate the salmon and spoon the creamy Tuscan sauce over the top. Garnish with fresh basil leaves and lemon slices.
