1 pound large shrimp, peeled and deveined

1 cup coconut milk

2 tablespoons red curry paste

1 tablespoon grated fresh ginger

2 cloves garlic, minced

1 tablespoon lime juice

1 teaspoon soy sauce

1 tablespoon brown sugar

2 tablespoons vegetable oil

Salt and pepper to taste

Fresh cilantro, for garnish

Cooked jasmine rice, for serving

Instructions
 

In a medium bowl, combine the coconut milk, red curry paste, grated ginger, minced garlic, lime juice, soy sauce, and brown sugar. Whisk until smooth and set aside.

    Heat the vegetable oil in a large skillet over medium heat. Once hot, add the peeled and deveined shrimp to the skillet in a single layer and cook for about 2-3 minutes on one side until they turn pink. Flip them over and cook for an additional 2 minutes.

      Pour the coconut milk mixture over the shrimp in the skillet. Stir gently to coat the shrimp evenly in the sauce. Allow the mixture to simmer for 5-7 minutes, or until it thickens slightly. Season with salt and pepper to taste.

        Once the shrimp are cooked through and the sauce has thickened, remove the skillet from heat.

          Serve the creamy coconut shrimp over a bed of jasmine rice, drizzling extra sauce from the pan over the top. Garnish with fresh cilantro.
