3 lb beef chuck roast

2 tablespoons olive oil

1 onion, chopped

3 cloves garlic, minced

4 large carrots, cut into 2-inch pieces

4 medium potatoes, quartered

2 cups beef broth

2 tablespoons Worcestershire sauce

2 teaspoons dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

2 tablespoons cornstarch (optional for thickening)

Fresh parsley for garnish

Sear the Beef: Turn on the Instant Pot and select the Sauté function. Add olive oil and let it heat up. Season the beef chuck roast generously with salt and pepper. Once the oil is hot, add the roast to the pot and sear on all sides until browned (about 4-5 minutes per side). Remove the roast and set it aside.

    Sauté Aromatics: In the same pot, add the chopped onion and minced garlic. Sauté for 2-3 minutes until the onion is translucent. This will add depth to the flavors.

      Deglaze the Pot: Pour in 1 cup of beef broth and use a spatula to scrape up the brown bits from the bottom of the pot. This step is crucial to avoid the burn notice.

        Add Remaining Ingredients: Return the roast to the pot. Add the carrots, potatoes, Worcestershire sauce, dried thyme, dried rosemary, and the remaining beef broth. Make sure the liquid covers at least a portion of the roast.

          Cook Under Pressure: Secure the lid on the Instant Pot, making sure the valve is set to sealing. Select Manual or Pressure Cook and set the timer for 60 minutes on high pressure.

            Natural Release: After the cooking time is complete, let the pressure release naturally for about 15 minutes. Then, turn the valve to venting to release any remaining pressure. Carefully remove the lid.

              Thicken the Gravy (optional): If you desire a thicker gravy, remove the meat and vegetables from the pot with a slotted spoon. Switch the Instant Pot back to “Sauté” and whisk together the cornstarch and 2 tablespoons of water to create a slurry. Slowly pour the slurry into the pot while gently stirring until the gravy thickens.

                Serve: Slice the pot roast and serve alongside the carrots and potatoes. Drizzle with the thickened gravy and garnish with fresh parsley for a pop of color.
