2 tablespoons olive oil

1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

3 cloves garlic, minced

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (adjust for spice preference)

2 cups chicken broth

12 ounces penne pasta

1 can (14.5 ounces) diced tomatoes (with juice)

1 cup heavy cream

1 cup spinach, fresh (or 1/2 cup frozen)

1/2 cup Parmesan cheese, grated

Salt and pepper to taste

Instructions
 

Turn on the Instant Pot and set it to sauté mode. Add the olive oil and heat until shimmering.

    Add the chicken pieces to the pot and season with salt, pepper, Italian seasoning, and red pepper flakes. Sauté for about 5 minutes or until the chicken is browned on all sides.

      Stir in the minced garlic and cook for an additional 1 minute, until fragrant.

        Pour in the chicken broth and scrape any brown bits off the bottom of the pot using a wooden spoon.

          Add the penne pasta and diced tomatoes, and gently push the pasta down into the liquid without stirring.

            Seal the Instant Pot lid and set it to cook on high pressure for 4 minutes.

              Once the cooking time is complete, carefully perform a quick release of the pressure. Remove the lid and stir the pasta and chicken together.

                Turn the Instant Pot back to sauté mode, and add in the heavy cream and fresh spinach. Cook for about 2-3 minutes, until the spinach is wilted and the sauce is heated through.

                  Stir in the grated Parmesan cheese until melted and well combined. Adjust seasoning with more salt and pepper if needed.

                    Serve hot, garnished with additional Parmesan cheese and a sprinkle of fresh basil if desired.
