Ingredients
  

1 lb ground beef

1 cup frozen corn, thawed

1 cup mashed potatoes (prepared)

1 cup shredded cheddar cheese

1/2 cup diced onions

1/4 cup sour cream

1 tsp garlic powder

1 tsp dried parsley

Salt and pepper to taste

1 package (8 oz) mini phyllo pastry cups

Fresh chives for garnish

Instructions
 

Preheat your oven to 375°F (190°C).

    In a skillet over medium heat, brown the ground beef with the diced onions, seasoning with garlic powder, salt, and pepper. Cook until the beef is no longer pink, about 5-7 minutes. Drain any excess grease.

      In a mixing bowl, combine the cooked beef mixture with thawed corn, mashed potatoes, cheddar cheese, sour cream, and parsley. Mix until well combined.

        Spoon the beef and potato mixture into each mini phyllo pastry cup, filling them generously but not overflowing.

          Place the filled pastry cups on a baking sheet and bake for 12-15 minutes, or until the cups are golden brown and the filling is heated through.

            Remove from the oven and let cool slightly. Garnish with chopped fresh chives before serving.
