1 cup sweet corn, fresh or frozen

1 cup cream cheese, softened

1 cup sharp cheddar cheese, shredded

1/2 cup scallions, finely sliced

1/2 cup cooked bacon, crumbled

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 package mini phyllo pastry cups (15 count)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the oven to 375°F (190°C).

    In a large mixing bowl, combine the sweet corn, cream cheese, cheddar cheese, scallions, crumbled bacon, garlic powder, onion powder, salt, and pepper. Mix until all ingredients are well incorporated and create a creamy mixture.

      Place the mini phyllo pastry cups on a baking sheet.

        Spoon the corn mixture evenly into each pastry cup, filling them just to the rim.

          Bake in the preheated oven for 15-20 minutes, or until the tops are golden and the filling is bubbly.

            Once done, remove from the oven and let them cool for a few minutes.

              Garnish with fresh chopped parsley before serving.
