6 slices of Irish bacon, diced

1 small onion, chopped

2 cloves garlic, minced

4 medium potatoes, peeled and diced

4 cups vegetable broth

2 cups green cabbage, shredded

1 cup heavy cream

2 tablespoons olive oil

1 teaspoon dried thyme

Salt and pepper to taste

Fresh chives, chopped (for garnish)

Instructions
 

In a large pot, heat olive oil over medium heat. Add the diced bacon and sauté until crispy and golden brown. Remove the bacon with a slotted spoon and set aside, leaving the rendered fat in the pot.

    Add the chopped onion to the pot and cook in the bacon fat for about 3-4 minutes until softened. Stir in the minced garlic and cook for an additional minute until fragrant.

      Add the diced potatoes to the pot, followed by the vegetable broth and dried thyme. Bring the mixture to a boil, then reduce the heat and simmer for about 15-20 minutes, or until the potatoes are tender.

        Stir in the shredded cabbage and cooked bacon. Continue to simmer for another 5 minutes until the cabbage is wilted.

          Using an immersion blender, carefully blend the soup until smooth and creamy. Alternatively, you can blend it in batches using a regular blender, then return it to the pot.

            Pour in the heavy cream, stirring well to combine. Season with salt and pepper to taste. Let the soup simmer together for an additional 5 minutes to meld the flavors.

              Remove from heat and serve hot, garnished with freshly chopped chives on top.
