6 strips of Irish bacon, chopped

1 medium onion, finely diced

2 cloves of garlic, minced

4 cups of vegetable broth

3 medium potatoes, peeled and diced

1/2 head of green cabbage, roughly chopped

2 carrots, diced

1 bay leaf

1 teaspoon dried thyme

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley for garnish

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped Irish bacon and cook until crispy. Remove the bacon bits and set aside, leaving the drippings in the pot.

    In the same pot, add the diced onion and sauté for about 3-4 minutes until translucent. Then add the minced garlic and sauté for an additional minute until fragrant.

      Pour in the vegetable broth, followed by the diced potatoes, carrots, and bay leaf. Bring the mixture to a boil, then reduce the heat and let it simmer for 10-15 minutes until the potatoes are tender.

        Add the chopped cabbage and dried thyme to the pot. Simmer for another 5-7 minutes until the cabbage is wilted and tender.

          Season the soup with salt and pepper to taste. Remove the bay leaf before serving.

            Serve the soup hot, garnished with the reserved crispy bacon bits and chopped fresh parsley for added flavor and a pop of color.
