4 large russet potatoes, peeled and cubed

4 cups kale or cabbage, finely chopped

1 cup green onions (scallions), chopped

1/2 cup milk (or cream for richness)

4 tablespoons unsalted butter

Salt and black pepper to taste

A pinch of nutmeg (optional)

Extra melted butter for drizzling (optional)

Instructions
 

Begin by bringing a large pot of salted water to a boil. Add the cubed potatoes and cook for about 15-20 minutes until tender.

    While the potatoes are cooking, in a separate pot, bring a small amount of water to a gentle simmer. Add the chopped kale or cabbage and cook for 5-7 minutes until wilted and tender. Drain and set aside.

      In a skillet, melt 2 tablespoons of butter over medium heat. Add the chopped green onions and sauté for about 3 minutes until they are tender and fragrant.

        Once the potatoes are cooked, drain them and return them to the pot. Add the sautéed green onions, the cooked greens, and the remaining butter.

          Pour in the milk and mash everything together with a potato masher until you reach your desired consistency. For a creamier texture, add a little more milk.

            Season your colcannon with salt, black pepper, and a pinch of nutmeg if using. Mix well to combine all the flavors.

              Serve hot with a drizzle of melted butter on top for added richness and flavor.
